service_times is still almost exclusively (95%) used on religious amenities. I’m not aware of another properly documented use case. On the other hand, I agree that opening_hours is not fully correct.
Why do we need this subkey at all? We can move the auditory / smell etc. to a subkey and can tag the time directly in the value:
sensory_friendly:auditory = Th 10:00-11:00
