I’m using traffic_sign=street_name_sign (as mentioned above) for the object of a street name sign itself when doing urban micro mapping. Found that on taginfo when I started mapping them for the first time. I’m not adding a name value at all - maybe inscription or similar would be a better choice for recording this information? Or adding it with brackets to allow mapping multiple signs on one node? (like street_name_sign["Example Street"]).
