To be clear, that’s a route created by a Komoot user. That route link even says “Create and customize your own version of this adventure using the full route below as a template … Plan your own version of this adventure in the multi-day planner based on the stages suggested in this Collection”. In short, it’s no different to any of the 1000s of unofficial web pages and printed guides that exist already.
No-one’s saying that it’s not a good idea for travel guides to do this, only that it’s impossible for OSM to have relation breaks that accommodate all the travel guides if the travel guides are all written by J Random User** and all have different stages. Where there are official (or even just sensible, based on distance from civilisation) divisions it does make perfect sense for OSM to represent those.
Sigh. The full sentence I actually wrote was this:

and the “above you said” part is literally quoting exactly what you had previously written.
Everyone here is genuinely trying to help you achieve your goal - and part of that is pointing out where you are making assumptions that are presumably true in your experience but aren’t valid everywhere.
As mentioned above, you will need to proceed on a case-by-case basis (hence my suggestion of 1 USA and one European one, and Minh’s of starting with the AT).
Separately to that if the wiki* software can’t handle OSM data then there are a bunch of non-wiki* ways of displaying what you want and I’m sure that people here will be able to help you do that.
** edited to make clear: “J Random User” is refererring to the dozens of people writing travel guides in the internet, and in particular to the Komoot user who wrote the one linked at https://www.komoot.com/collection/2210797. It’s not referring to anyone taking part in this thread.
